Kijja Silanuluck is owner of the Thai vegan restaurant in King's Street, the Green Palace. We asked him recently why precisely vegan and he told us that so many of his customers refuse eat any by-products of animals. He considers them the kindest people he has ever met, he wants to do it for them.
Kijja's been vegan himself for many years because he says, “it's my nature”. “I do it for the animals”.
The Green Palace has only been open for a few months but already is frequented by the animal rights community. The food is authentic Thai and the décor is Buddhist. Lunch is a choice of two dishes for a mere $6.00 and the price of dinner for $8.50 – with a choice of rice or vegan noodles.

Green Curry Tofu
Ingredients:
Red Chilli
Green Chilli
Galanga
Lemongrass
Curry Paste
Kiffer Limefruit Skin
Coriander root
Peppercorn
Coriander seed
Salt
Tofu
Coconut milk Vegetables include in a selection of eggplant, or bamboo shoots
Soy sauce
Palm sugar
Basil leaves
Lime leaves
Method:
Mix all the curry paste ingredients and blend through until very fine.
Cut the tofu in small cubes
Prepare the vegetables. Cut into small size chunks.
Mix the curry paste with the coconut milk until it thickens
Add the tofu or beancurd and then add more coconut milk, water and season with the soy sauce.
Add the palm sugar, then add the vegetables. Lastly add the lime leaves and basil.
Very popular Papaya Salad
Ingredients:
Green (raw) papaya
Plain sugar
Salt
Lime Juice
Peanuts, cooked
Snake Beans
Cherry Tomatoes
Chilli
Method:
Prepare the raw Papaya in slithers Grind the peanut and chilli in a mortar and pestle
Add lime juice
Salt
Sugar
Cheery Tomatoes
Mix them all together and taste.
